No bake mango slices are a delicious snack packed with nutritious ingredients. Make a batch and keep handy for those busy days when you need an on-the-go snack.
Makes 16 bars
250ml (1 cup) chopped Montagu mango strips
125ml (½ cup) Montagu pitted dates
30ml (2 tbsp) honey
30ml (2 tbsp) peanut butter
5ml (1 tsp) vanilla extract
80ml (1/3 cup) Montagu pecan halves
10ml (2 tsp) cinnamon
250ml (1 cup) rolled oats
150ml desiccated coconut
30ml (2 tbsp) coconut flour
1.) Line a 20cm square tin with plastic wrap. Set aside.
2.) Place three quarters of the chopped Montagu mango in a small bowl. Cover with boiling water
and leave to stand for 15 minutes.
3.) Place the Montagu dates, honey, peanut butter and vanilla extract in a food processor. Blitz until
combined into a paste.
4.) Drain the mango and add to the food processor with the Montagu pecans and cinnamon. Blitz
again until combined (leave a few small nut chunks in the mixture).
5.) Tip the mixture into a bowl. Add the oats, coconut, coconut flour and the remaining Montagu
mango pieces. Mix well.
6.) Wet your hands lightly and press the mixture into the lined tin in an even layer. Freeze until firm
enough to cut.
7.) Carefully remove the mixture from the tin and cut into bars. Store in the fridge.
