Montagu Yellowtail Almond & Parmesan Crust Banting Recipe

INGREDIENTS

500g Yellowtail, Hake or Kingklip seasoned with salt, olive oil and freshly ground black pepper to taste

2-3 sping onions,

chopped 1 Clove garlic

crushed 75g rindless streaky bacon, finely chopped

125ml grated Parmesan cheese

125ml Montagu ground almonds/almond flour

1 lemon, grated zest

10ml freshly chopped dill

30ml melted butter

60ml Montagu flaked almonds, toasted

 

METHOD Place fish on a baking sheet lined with baking paper. Season with salt and pepper and drizzle with olive oil. Heat 30ml olive oil in a frying pan. fry the spring onion, garlic and bacon until soft and golden. Leave to cool. Mix the Parmesa, almonds, lemon zest, dill and melted butter together. Add bacon mixture and mix through. Spoon on top of the fish and press down lightly to form a crust. Bake in a preheated oven at 220 C 15-20 minutes or until golden and the fish is just cooked. Sprinkle with toasted flaked almonds and serve with lemon and extra dill. Serve with baby marrow spaghetti. Serves 2
